Marmitaki

Marinated tuna roasted with a classic marmitako sauce. A fusion between typical Spanish and Japanese cuisines.

10 g Custom Culinary® Gold Label Fish Fumet
As needed Soy sauce
4 pieces  Tuna (140 g each)
1 piece Onion
3 pieces Garlic
80 g Soy sprouts
1 piece Green pepper
1 piece Red pepper
10 g Sugar
500 g Tomato
As needed Olive oil
As desired Sesame

Preparation

Preparation Step 1–  Marmitaki
1. Chop onion, garlic and pepper and cook them slowly till golden in a casserole with olive oil. Add the tomato and the sugar.

2. Add the Custom Culinary® Gold Label Fish Fumet into the sauce. Let all the ingredients cook until they get concentrated and have a nice sweet taste.

3. Cover the tuna pieces with soy sauce and let them marinate for around 2 hours. Take them out from the soy sauce and let them rest in the fridge. Roast the tuna pieces in a pan on all the sides but letting them raw inside. Add sesame seeds during the process.

4. Take them out from the pan and cut in cubes. Use a good knife to ensure that the cut is clean. Serve the cubes with drops of marmitako sauce on the base and the tuna on the top and enjoy!
