Crispy Serrano Ham & Manchego Cheese Croquettes

Deep -fried ham and cheese, who could ask for a better combo. Featuring Chef's Own Pre-Dust, Chef's Own Tempura Batter and Chef's Own Fine Panko Flakes. These croquettes are a great bite for a mid-day snack.

What You'll Need

1 litre Milk
200 g Butter
200 g Flour
150 g Manchego Cheese, freshly grated
340 g Serrano Ham, finely diced
20 g Chives, chopped
8 g Salt
2 g Black Pepper
100 g Chef's Own™ Pre-Dust 
250 g Chef's Own™ Tempura Batter 
600 ml Water
200 g Chef's Own™ Fine Panko Breadcrumbs


Preparation Step 1– Serrano
1. REPARE THE CROQUETTE FILLING: Preheat the milk in a pot. In a separate pot, melt the butter. When butter starts to foam add the serrano ham dices and sauté for 2-3 min. Add flour and stir. Add hot milk and keep stirring while bringing it to boil. Simmer for 7-8 min. Add the cheese and season with the chives, salt & pepper. Pour it on a tray and let it cool completely. Shape the croquettes.

2. Dust the croquettes with Chef's Own™ Pre-Dust  (Step 1)

3. Dissolve Chef's Own™ Tempura Batter in cold water. Allow batter to rest for 10 minutes, dip croquettes into the batter. (Step 2)
Preparation Step 4– Serrano
4. Coat the croquettes in Chef's Own™ Fine Panko Breadcrumbs (Step 3)
Preparation Step 5 – Serrano
5. Deep fry the croquettes at 175°C or 3-4 min until golden brown.
