Lamb Kofta in Spicy Tomato Sauce

Fried Lamb Kofta seasoned with Custom Culinary® Chef’s Own Korma Curry Flavor Marinade, cooked in a spicy tomato sauce made with Custom Culinary®Gold Label Chunky Tomato Sauce.

1 kg Lamb, minced
100 g White onion, finely chopped
30 g Garlic, minced
30 g Coriander leaves, finely chopped
20 g Mint leaves, finely chopped
5 g Black pepper, coarsely ground

Custom Culinary® Chef’s OwnTM Korma Curry Flavor Marinade
75 ml Olive Oil
150 g White onion, finely chopped
30 g Garlic, finely chopped
80 g Green chilli, finely chopped
600 g Custom Culinary® Gold Label Chunky Tomato Sauce
200 g Chicken Stock

Preparation

  1. In a bowl combine the ground lamb along with chopped onion, garlic, coriander, mint leaves, black pepper and Custom Culinary® Chef’s OwnTM Korma Curry Flavor Marinade.
  2. Mix well until everything is well mixed and uniform.
  3. Roll the mince mix into round balls about 1.5-inch diameter.
  4. Shallow fry the meat balls in medium heat fry pan with olive oil until brown. Remove from pan and set aside.
  5. To the hot pan with the oil, add chopped onion, chili and garlic. Sauté for 2 minutes until soft.
  6. Add the fried meat balls, toss well.
  7. Add Custom Culinary® Gold Label Chunky Tomato Sauce to the meat balls, bring to a boil.
  8. Add the chicken stock to adjust the consistency of the sauce, bring to a boil and cook in low heat for 5 minutes.
  9. Turn off heat and serve with rice, pita bread and tabbouleh.
