  Marinade for Lamb
12pcs lamb cutlets
15g green peppercorns
80ml lime juice
40ml fish sauce
30g brown sugar
10ml sesame oil
10g ginger, grated
1pc long red chilli, finely chopped
   
  For the Salad
2pcs Japanese cucumbers, thinly sliced
350g mixed tomatoes, halved
1pc red onion, thinly sliced
20g coriander leaves
20g mint leaves
75g toasted cashews, coarsely chopped

Preparation

Step 1

Combine the peppercorns, lime juice, fish sauce, sugar, oil, ginger, and chilli in a large bowl. Add the lamb to the marinade in the bowl and turn to coat. Set aside for 15 mins to develop the flavors.

Step 2

Heat a barbecue grill or chargrill on medium high. Drain the lamb. Cook for 2-3 mins on each side, or until cooked to your liking. Transfer to a plate and cover with foil. Set aside and allow to sit for 5 mins.

Step 3

Arrange the cucumber, tomato, onion, coriander, and mint on a serving platter. Sprinkle with cashew. Arrange the lamb on the platter. Serve with Custom Culinary™ Master’s Touch™ Jaew Sauce.
