Oriental Crispy Fish Cakes with SriRacha Mayonnaise

Fish Cake spiced with Custom Culinary® Classic Fried Rice Seasoning and coated with unique Custom Culinary® Stay Crisp™ 3 Pass Coating Solution, fried and served with Custom Culinary® SriRacha flavored Mayonnaise.

100 gm Fish Mince
30 gm Chicken Mince
10 gm Egg white
05 gm Custom Culinary® Classic Fried Rice Seasoning
20 gm Custom Culinary® Creative 3P Predust
20 gm Custom Culinary® Creative 3P Batter
50 gm Custom Culinary® Creative Breading
 1 litre Oil for frying
05 gm Custom Culinary® SriRacha Marinade for Dip
100 gm Mayonnaise for Dip

Preparation

  1. In a bowl, blend together fish minced, chicken mix, egg white and Custom Culinary® Classic Fried Rice Seasoning in to an even mix.
  2. Divide into even size cakes and keep aside.
  3. Add 30 gm of Chilled water in the Custom Culinary® 3P batter and blend in to as a smooth mix.
  4. Dip the fish cakes in Custom Culinary®3P Predust, then in prepared batter and coat it with Custom Culinary® Creative Breading and deep fry in pre-heated oil till it turns golden in color.
  5. For dip, add Custom Culinary®Sriracha Mariande in mayonnaise and whisk well.
  6. Serve Crispy fried Fish cakes in platter garnished with greens and prepared dip.

Chef Tips

Fish can be replaced with prawns or crab for a different experience.
