Mutton Seekh Chaat

Our version of the favourite Indian street food. Mutton Seekh Kebab featuring Custom Culinary® Alfa Chef’s Own Tandoori Tikka Seasoning, tangy and spicy bhel, tossed in spicy sweet & sour chutney.

Quantity Ingredients
50 gms Puffed Rice
100 gms Mutton Seekh Kebab (see sub recipe below)
30 gms Chopped Onion
25 gms Chopped Tomato
10 gms Chopped Coriander greens
25 gms Roasted Peanuts
1 gm Chopped Green Chili
10 gms Tamarind Chutney
10 gms Mint Chutney
5 gms Sev
5 gms Pomegranate seeds
  Mutton Seekh Kebab (Sub Recipe):
500 gms Mutton Mince
25 gms Chef's Own® Tandoori Tikka Seasoning
15 gms Ginger Garlic Paste
10 gms Chopped Green Chili
15 gms Coriander, chopped

Preparation

For the Mutton Seekh Kebab Marinade:
  1. In a large bowl, mix mutton mince with garlic paste and Chef’s Own® Tandoori Tikka seasoning.
  2. Add chopped coriander leaves and green chilies.
  3. Refrigerate the meat mixture, cover, and marinate for at least 5 hours.
  4. About 25 minutes before serving, shape the meat mixture into long 'tubes' around the skewers (seekhs) and cook in the Tandoor oven or into the pre-heated oven (on a drip tray) and bake for 8-10 minutes.
  5. Brush with oil and cook for another 2 minutes.
  6. Cut into small pieces and reserve for the chaat.
For the Chaat:
  1. Toss all the ingredients for chaat together.
  2. Garnish with sev & pomegranate.
