Braised Beef Short Ribs

Classic Braised Beef Short Ribs cooked low and slow until they reach fall-off-the-bone deliciousness.  This simple dish is a classic that is full of comfort food flavor. Uses Custom Culinary Alfa® Chef’s Own Demi-Glace Paste.

12 pieces Beef Short Ribs, Cut into Large 320 gms Pieces
250 gms Flour, All Purpose
2 gms Black Pepper, Ground
150 gms
Vegetable Oil
500 gms Custom Culinary Alfa® Chef's Own™ Demi-Glace Paste


  1. Mix flour and pepper. Dredge short ribs in flour, coating thoroughly. Shake off excess flour.
  2. In a large braising pan, heat vegetable oil over medium high heat. Brown beef pieces evenly. Pour off excess oil. Place browned short ribs in a roasting pan with a lid.
  3. Prepare Chef's Own® Demi-Glace Concentrate following jar instructions.
  4. Pour the reconstituted Chef's Own® Demi-Glace Paste into the pan and allow it to braise for 2 hours.
  5. Add on rosemary sprig, cover with lid, and cook on low for 8 hours, until meat is fork tender.
  6. Serve on a bed of mash potato and garnish with rosemary.
