Southwest-style fried chicken with a South-Indian twist. Featuring Custom Culinary® Alfa Chef’s Own Spicy Malabar Seasoning for the chicken marinade, combined with Custom Culinary ® Alfa Chef’s Own Tempura Batter and Chef’s Own Spicy Breader Concentrate.

1,000 gms Chicken leg boneless
20 gms Spicy Malabar Seasoning
100 gms Water
  FOR BATTER:
100 gms Tempura Batter
50 gms Gram flour
350 gms Chilled water
  FOR BREADING:
100 gms Flour no1
10 gms Spicy Malabar Seasoning
90 gms Spicy Breader Concentrate
For Frying Frying Oil

Preparation

Marinade
  1. Make slurry of water and Chef's Own™ Spicy Malabar Seasoning.
  2. ​In a bowl, add the boneless chicken leg and slurry together and marinate it for 4-5 hours in a chiller.
Breading
  1. Mix the Flour & Spicy Breader Concentrate evenly.
  2. Drop the marinated boneless chicken legs into the Breader Mix and coat evenly.
  3. Shake excess flour from the chicken and drop in batter.
  4. Gather the chicken immediately and drop it back into the breader mix.
  5. Scoop lift, scoop fold for 3-4 times.
  6. Shake off excess flour from the chicken and drop in fryer. Cook at 165c for 8-10 minutes.

Garnish with fried curry leave.
