Battered Calamari

Deep-fried calamari with a little kick. Featuring Chef's Own Pre-Dust and Chefs Own™ Tempura Batter. A crispy batter seasoned with rosemary, thyme, parsley and cayenne pepper makes for a great and diverse entree. 

What You'll Need

1,5 kg Calamari, cleaned
5 g Rosemary, chopped
10 g Thyme, chopped
20 g Parsley, chopped
10 g Salt
4 g White pepper
2 g Cayenne pepper
100 g Chef's Own™ Pre-Dust
250 g Chef's Own™ Tempura Batter
600 ml Water


Preparation Step 1– Calamari
1. Slice the cleaned calamari into 2-4 mm rings, cut the tentacle in half. Season the calamari with salt/white pepper & cayenne pepper.

2. Dust the calamari with Chef's Own™ Pre-Dust. (Step 1)

3. Dissolve Chef's Own™ Tempura Batter in cold water. Allow batter to rest for 10 minutes, dip the calamari one by one into the batter. (Step 2)
Preparation Step 4– Calamari
4. Deep fry the calamari at 160°C for 3-4 min & sprinkle some of the batter over the calamari while frying to get extra crispy edges.
