Crunchy Sweet Potato Fries

A  new take on the classic French fry. Featuring Chef's Own™ Pre-Dust and Chef's Own™ Tempura Batter. These sweet potato fries are great as any side dish. Seasoned with nutmeg and sweet paprika, you will be wondering what other main dishes you can have with these. 

What You'll Need

Amount Ingredients
1.5 kg Sweet potato
10 g Salt
8 g Sweet paprika powder
3 g Nutmeg
100 g Chef's Own™ Pre-Dust
200 g Chef's Own™ Tempura Batter
650 ml Cold water


Preparation Step 1 - Sweet Potato
1. Wash & peel (optional) the sweet potatoes. Cut into equal fries. Soak in cold water for 10 minutes to rinse off some of the starch. Dry off with paper towel.
Preparation Step 2 - Sweet Potato
2. Dust the sweet potatoes with Chef's Own™ Pre-Dust. (Step 1)
Preparation Step 3 - Sweet Potato
3. Dissolve Chef's Own™ Tempura Batter in cold water and season with sweet paprika and nutmeg. Allow batter to rest for 10 minutes and dip fries into the batter. (Step 2)
Preparation Step 4 - Sweet Potato
4. Remove excess batter while placing a few at a time into the fryer so they do not stick together.
Preparation Step 5 - Sweet Potato
5. Fry for 4-5 minutes at 170°C. Drain off excess oil on a paper towel & season with a pinch of salt.
