Vegetable Pakora

Pakora are street food fritters from India. Featuring Chef's Own Pre-Dust and Chef's Own™ Tempura Batter. Our veggie pakora are filled with; red onions and green, yellow and red peppers. Seasoned with garlic, ginger and marsala, our pakoras will have you hearing the tuk tuks.

200 g Green peppers
200 g Yellow peppers
200 g Red peppers
200 g Red onion
25 g Ginger, freshly chopped
25 g Garlic, freshly chopped  
8 g Salt
3 g Black pepper
10 g Indian marsala 
100 g Chef's Own™ Pre-Dust
500 g Chef's Own™ Tempura Batter
250 g Gram flour
1,250 ml Cold water

Preparation

Preparation Step 1 - Pakora
1. Wash & slice the peppers & the onion into equal fine slices.
Preparation Step 2 - Pakora
2. Dust the vegetables with Chef's Own™ Pre-Dust. (Step 1)
Preparation Step 3 - Pakora
3. Dissolve the gram flour and the Chef's Own™ Tempura Batter in cold water & mix in the indian marsala, chopped ginger and chopped garlic. Allow batter to rest for 10 minutes and dip the vegetables into the batter. (Step 2)
Preparation Step 4 - Pakora
4. Grab a bunch (50g) of vegetables with tongs & carefully place them into the fryer. (Step 3)
Preparation Step 5 - Pakaro
5. Deep- fry at 170°C for 3-4 minutes.
