Crispy Turkey Ham & Manchego Cheese Bites

Deep-fried turkey ham and cheese, who could ask for a better combo? Featuring Custom Culinary® Alfa Chef's Own Pre-Dust, Custom Culinary® Alfa Chef's Own Tempura Batter, and Custom Culinary® Alfa Chef's Own Panko Breadcrumbs. These make a great bite for a mid-day snack!

Quantity Ingredients
1 Liter Milk
200 gms Butter
200 gms Flour
150 gms Manchego Cheese, freshly grated
340 gms Turkey Ham, finely diced
20 gms Chives, chopped
8 gms Salt
2 gms Black Pepper
100 gms Chef's Own™ Pre-Dust 
250 gms Chef's Own™ Tempura Batter 
600 gms Water
200 gms Chef's Own™ Panko Breadcrumbs

Preparation


PREPARE THE CROQUETTE/DUMPLING FILLING:
  1. Preheat the milk in a pot. In a separate pot, melt the butter. When butter starts to foam, add the diced turkey ham and sauté for 2-3 min.
  2. Add flour and stir. Add hot milk and keep stirring while bringing it to boil. Simmer for 7-8 min.
  3. Add the cheese and season with the chives, salt & pepper.
  4. Pour it on a tray and let it cool completely. Shape the croquettes/dumplings.
  5.  Dust the croquettes/dumplings with Chef's Own™ Pre-Dust .
  6.  Dissolve Chef's Own™ Tempura Batter in cold water. Allow batter to rest for 10 minutes, dip croquettes/dumplings into the batter.
  7. Coat the croquettes/dumplings in Chef's Own™ Panko Breadcrumbs 
  8. Deep fry the croquettes/dumplings at 175°C or 3-4 min until golden brown.
