Asian Sweet Corn & Coriander Soup

Quantity Ingredients
20 gms Sunflower oil
6 sticks Lemongrass
10 gms Garlic, chopped  
10 gms Celery, chopped
1 kg Sweet Corn Kernel
8 gms
Gold Label® Mirepoix Base
3 gms Coriander leaves
200 ml Coconut Cream
3 gms Crushed black Pepper

Preparation

  1. Heat large saucepan. Add the oil and, once hot, stir in the garlic, onions and celery. Sauté Gold Label Mirepoix for 1 minute.
  2. Add the lemongrass and sweet corn kernels and sauté gently for 10-15 minutes. Reduce the heat to low.
  3. Add 1 liter of water and bring to the boil. Simmer gently for 15-20 minutes or until the vegetables are very soft.
  4. Remove from heat and cool the mix.
  5. Blend the coriander leaves and coconut milk in a blender wth the cooled mix from above. Then push the mixture through a sieve and into a clean saucepan.
  6. Garnish with corn and coriander to serve.
