Mediterranean White Bean Soup

Mediterranean White Bean Soup

Serve up this aromatic, flavorful soup of cannellini beans, spinach, artichokes and fresh herbs, simmered in a broth made with Custom Culinary Alfa® Gold Label Chicken Base.

What You'll Need

* Yield = 1/2 gallon 
Quantity Ingredients
1 Tbsp Olive Oil
1 each Onion, large, chopped  
2 each Garlic cloves, minced
1 each Carrot, large, chopped
1 each Tomato, chopped
6 cups Water
1 Tbsp Gold Label Chicken Base
1 tsp Thyme, dried
1/2 tsp Oregano
2 oz Artichokes, sliced
15 oz Cannellini beans, (one can) drained and rinsed
2 cups Baby Spinach
to taste Parsley, fresh, for serving
to taste Parmesan cheese, grated for serving


  1. In a large pot or saucepan, heat olive over medium high heat.
  2. Add onions and cook until onions are translucent, about 3-5 minutes.
  3. Add the garlic, carrots, tomato, thyme, oregano, salt and pepper, and cook for an additional 2-3 minutes.
  4. Add water, Chicken Base and beans, bring to a boil.
  5. Reduce heat and simmer for 15 minutes to combine all of the flavors together.
  6. Stir in the spinach and continue to simmer until the spinach wilts, about 2 minutes.
  7. Remove from heat, sprinkle fresh parsley and grated parmesan cheese, if desired, and serve immediately.
