Risotto with Mushrooms

30g Onion
30g White mushrooms
80g Italian rice
40g White wine
40g Butter
30g Parmesan cheese powder
10g Crab-flavored mushrooms
10g Chef's Own®Chicken Powder Seasoning
Sprinkle Olive oil
Sprinkle Salt

  1. Mix 10g of  Chef's Own®Chicken Powder Seasoning with 200g of water at a ratio of 1:20. Then boil the mixture at 100°C. Dice 20g of onion.

  2. Preheat a pot to 30%, add 20g of olive oil, a pinch of salt, and the diced onions, and stir-fry them until the diced onions soften and become fragrant. Then add 30g of white mushroom slices and 80g of Italian rice and stir-fry them until the rice is translucent.

  3. Spray 40g of white wine on the rice. After the wine is reduced, add the prepared 200g of chicken broth until it is reduced and the rice is 90% cooked, and then remove it from the fire.

  4. Add 40g of butter and mix them well until the juice wraps the rice. Sprinkle 30g of Parmesan cheese powder, stir the rice again, and then pour it into a bowl.

  5. Add salt, pepper, and olive oil to 10g of crab-flavored mushrooms and sauté them until they are aromatic.

  6. Put the fried crab-flavored mushrooms, chopped green onion, basil leaves, lemon zest and chili rings on the prepared rice for adornment.
