Root vegetables have a great texture & deep flavour while braising with our Custom Culinary® Gold Label Roast Beef Fond. We created a celeriac "Steak" with a Classic Beef Jus. We have used the white celeriac trimmings to make a smooth puree & the celeriac skin for more flavour inside the Beef Jus.

Cannelloni

Crispy Coral Cannelloni
Cannelloni are an Italian pasta variant traditionally filled with ricotta, spinach and minced meat and baked with tomato sauce or béchamel sauce. We made this slightly lighter & more creative version by making the cannelloni with our Custom Culinary® Gold Label Roast Chicken Fond, flour and oil. The filling consists of sautéed vegetables.
