After graduating from college, Dillon started his career as a chef. He is particularly skilled at cooking French and Italian cuisine. At Jean George Shanghai (one Michelin star) where he worked as a sous chef, he came to learn a lot about Western food cultures and ingredients and found his culinary inspirations. Later he was invited to participate in the gala dining show in Singapore as a special guest chef.
