Crispy Chicken Caesar Burger

The signature savory-creamy flavor profile of Caesar salad contributes to a Western burger that is crisp outside, tender inside, and rich in layers. 
 
Air-dry the chicken thigh, marinate, and pan-fry until it becomes golden crisp. Toast the brioche bun to a light char, spread it generously with Custom Culinary® Caesar Dressing, add crisp romaine lettuce, set the crispy cutlet on top, drizzle more Caesar Dressing, and scatter Parmesan over.

2 Boneless chicken thighs

2 cloves Garlic, minced
2 sprigs Fresh thyme
to taste Black pepper

Preparation

1. Dry the Chicken Skin:
Pound the chicken thighs with a meat mallet to tenderize, then rub an even layer of coarse salt over the skin.Leave uncovered in the refrigerator to air-dry. Alternatively, dry in a convection oven at 65°C for 40 minutes, until the skin is completely dry and pale golden. This helps the skin crisp up in the pan while keeping the meat juicy.

2. Marinate the Chicken:
Rub the dried chicken thighs with olive oil, then add the smoked paprika, minced garlic and fresh thyme. Drizzle with a little balsamic vinegar for tang and season with black pepper. Work the seasonings into the meat, then marinate for 15 minutes to let the flavors develop.

3. Prepare the Toppings and Dressing:
Wash the romaine lettuce and dry thoroughly. Set out the Custom Culinary® Caesar Dressing and grated Parmesan.

4. Pan-Fry the Chicken:
Heat a cast-iron skillet, then add a small pat of butter and let it melt.Place the chicken skin-side down in the skillet and cook over medium-low heat for 5-6 minutes, until the skin is golden and crisp. Flip and cook for another 5-6 minutes, until cooked through. Remove from the heat and set aside. The skin should be crisp and the meat tender and juicy.

5. Toast the Burger Buns:
Split the brioche buns in half. Melt a little more butter in the skillet and toast the buns on both sides over low heat until golden and lightly browned. Their rich, buttery flavor pairs beautifully with the Caesar dressing.

 6. Assemble the Burgers:
 a. Spread the bottom buns generously with Custom Culinary® Caesar Dressing.
 b. Add the well-drained romaine lettuce and top with the crispy chicken.
 c. Spoon plenty of Caesar Dressing over the chicken and finish with freshly grated Parmesan.
 d. Add the top buns to finish the crispy chicken Caesar burgers.
