Luwei-Spiced Chicken Wings with Orange

Here is a bold combination of Jiangnan street roast chicken and the flavor of fresh orange. Classic master-stock aromas lay the base, and the fruit lifts the notes. 
 
Tumble and marinate the wings with Custom Culinary®Luwei Styled Marinade and freshly squeezed orange juice. This will standardize flavor with a distinctive fruit note. 
 
Steamed then roasted, the skin tightens with a light char and the meat stays tender and juicy, savory with sweetness. Candied orange slices and crisp orange peel shreds bring bright fruit note to the braised base. Without much effort, you can prepare a dish of Chinese fusion cuisine with Chinese braising depth together with a creative fruit note.

400 g Chicken wings
40 g Custom Culinary® Luwei Styled Marinade
2 Oranges
40 g Orange juice

Preparation

1. Combine the chicken wings with Custom Culinary® Luwei Styled Marinade and orange juice (ratio: 100:10:10). Tumble together for 20 minutes, then marinate for 4 hours. 

2. Cook the marinated chicken wings in a combi oven at 180°C on the steam-roast setting for 12 minutes. 

3. Slice the oranges and coat with granulated sugar. Pass a kitchen torch over the slices until the sugar melts. 

4. Finely shred the orange zest, then blanch it in sugar syrup and dry in a low oven. 

5. Arrange the candied orange slices alongside the chicken wings and scatter the shredded orange zest over the top.
