Heirloom Tomato Bruschetta

Crispy Bruschetta made with diced heirloom tomatoes, red onions, roasted garlic, balsamic glaze, fresh basil, Parmesan and feta cheese.

What You'll Need

Amount Ingredients
2 pints Heirloom Grape Tomatoes (Char with Torch (optional) & Quartered)
1 Red Onions, Finely Diced
2 Tbsp Chopped Fresh Basil
1/8 cup Shredded Parmesan Cheese
1/8 cup Feta Cheese
2 Tbsp Balsamic Glaze
2 Tbsp Custom Culinary® Buttery Garlic Flavour Glaze
6 each Roasted Garlic Cloves (Roast Cloves in Oven for 15 mins at 350F (177C), Let Cool & then Slice)
1/4 tsp Kosher Salt
1/4 tsp Freshly Ground Black Pepper
1 loaf French Bread/Baguette, Sliced Horizontally/Lengthwise


  1. Mix tomatoes, red onions, 1 tablespoon of the basil, 1 tablespoon of the Custom Culinary® Buttery Garlic Flavour Glaze, roasted garlic, feta cheese, salt and pepper in a bowl until well blended. 
  2. Baste the remaining Custom Culinary® Buttery Garlic Flavour Glaze onto the cut sides of the bread and lightly toast.
  3. Place the tomato blend onto the toasted French bread. Drizzle with balsamic glaze, and garnish with the remaining basil and Parmesan cheese.

Chef Tips

Brush Custom Culinary® Butter Garlic Flavour Glaze over toasted bread and top with preferred cheese, then melt for buttery garlic bread.
