Korean Grilled Beef Lettuce Wraps

Gochujang-rubbed grilled sirloin steak over sweet and smoky stir-fried vegetables, fried noodles and a side of crisp iceberg lettuce wraps.

1 Head of Iceberg Lettuce
1 Sirloin Steak, Rubbed with Custom Culinary® Gochujang Seasoning
1/4 cup Cremini Mushrooms
1/8 cup Vegetable Oil
1/4 cup Red Onions, Julienned
1/4 cup Red Peppers, Julienned
1/8 cup Custom Culinary® Sweet & Smoky BBQ Flavour Glaze
1/8 cup Green Onions, Sliced on a Bias
1 cup Chow Mein Noodles, Fried
2 sprigs Cilantro

Preparation

  1. Rub the Custom Culinary® Gochujang Seasoning into all sides of the sirloin steak and let sit for at least 30 minutes and up to a maximum of 4 hours to marinate.
  2. Remove the core/stem from the iceberg lettuce and soak in ice-cold water for 15 minutes. Once the time is up, place the head of iceberg lettuce cut side down on a wire rack over a sheet pan to drain well for 5 minutes. This will make it easier to pull apart the lettuce cups.
  3. Warm 1 tbsp. of the vegetable oil over medium-high heat in the sauté pan. Add the onions, mushrooms and red peppers and cook until soft and tender. Add the Custom Culinary® Sweet & Smoky BBQ Flavour Glaze into the pan and cook for another minute. Add the noodles and green onions to the pan and mix until well blended. Keep hot to the side.
  4. Heat up and oil the grill with the remaining 1 tbsp. of oil. Place the rubbed sirloin steak on an angle on the hottest part of the grill and cook for 2 minutes. Turn steak 90 degrees and cook for another 2 minutes creating diamond grill markings. Flip the steak and cook to desired doneness. Going against the grain, slice the sirloin steak widthwise into ¼” pieces.
Assembly
  • Pull apart iceberg lettuce and gently shake off any excess water. Keep the lettuce cups folded into each other and place on one side of the plate. In the serving dish, add the sauced vegetables and noodles, and shingle the sliced steak over top. Add the sprigs of cilantro over top of the steak. Place the mini tongs in the middle of the plate.

Chef Tips

  • You can make these no-added-gluten if you remove the noodles or sub with no-added-gluten spaghetti and substitute the sweet & smoky BBQ Glaze for no-added-gluten tamari sauce mixed with our Custom Culinary® Kansas City Style BBQ Seasoning.

  • If you prefer less watery crisp lettuce, go for Boston bibb which requires no soaking, just a quick wash.
