Elotes Corn Salad

Inspired by the delicious Mexican street food of charred corn on a cob, this elote corn salad culls all the iconic flavours but less the mess. Grilled corn is combined with jalapeño, red onion, avocados and cheese, tossed with a jalapeño guacamole and sriracha lime seasoning, and covered with a buttery garlic flavour glaze. Finished with fresh cilantro and grilled lime wedges.

6 Corn Cobs, Boiled in Salted Water for 5 mins
1/2 Jalapeño, Seeded and Chopped Fine
1/2 Red Onion, Chopped Fine
2 Avocados, Chopped into 1" Pieces
1 Tbsp Crumbled Cotija (or Feta) Cheese
1 Lime + 3 Wedges Zest and Juice
3 Sprigs Fresh Cilantro
1 Tbsp  Custom Culinary® Buttery Garlic Flavour Glaze
1 Tbsp Custom Culinary® Jalapeno Guacamole Seasoning
Pinch Custom Culinary® Sriracha Lime Seasoning
(optional) Tortilla Chips

Preparation

  1. Toss corn cobs in vegetable oil and grill on high heat until slightly charred, approximately 2 minutes per side. Remove and allow to cool. 
  2. Place lime wedges onto hot grill and let sit approximately 1 minute per side. Remove and set aside. 
  3. Remove the grilled corn from cob and place into a stainless-steel bowl. Add the jalapeño, red onion, avocados and cheese. 
  4. Add the lime zest and juice,  Custom Culinary® Buttery Garlic Flavour Glaze, Custom Culinary® Jalapeño Guacamole Seasoning, and Custom Culinary® Sriracha Lime Seasoning, tossing lightly to combine.
  5. Serve with grilled lime wedges, fresh cilantro and tortilla chips (if desired).
