Louisiana Crispy Chicken Sandwich

A fresh chicken thigh, buttermilk breaded and fried, tossed in a spicy, peppery glaze and served on a buttery garlic bricohe bun with tangy sriracha-lime mayo and sweet pickles.

  Frying Oil
1 Chicken Thigh, De-Boned
1/2 cup Buttermilk
1/2 cup Custom Culinary® Seasoned Flour
3 Tbsp Custom Culinary® Hot Louisiana Flavour Glaze
1 Brioche Buns
1 Tbsp Mayo
1/2 tsp Custom Culinary® Sriracha Lime Seasoning
1 Tbsp Custom Culinary® Buttery Garlic Flavour Glaze​
6 each Bread & Butter Pickle Slices


  1. Preheat fryer to 360°F (182°C).
  2. Place the chicken into Custom Culinary® Seasoned Flour and ensure the flour gets into all the folds of the chicken meat. Dust off excess flour.
  3. Add the chicken thigh into buttermilk and drip off excess buttermilk.
  4. Add the chicken back into the Custom Culinary® Seasoned Flour until well coated and shake off excess flour.
  5. Deep fry the chicken thigh for approximately 5-6 minutes or until the internal temperature is at least 165°F (74°C).
  6. Toss the fried chicken with Custom Culinary® Hot Louisiana Flavour Glaze until evenly coated.
  7. Brush the cut sides of the brioche bun with Custom Culinary® Buttery Garlic Flavour Glaze and toast until golden brown.
  8. Whisk together mayo and Custom Culinary®  Sriracha Lime Seasoning until well blended with no lumps.
  9. Assemble sandwich (from bottom to top) with brioche bottom bun, sriracha-lime mayo, crispy fried chicken, sweet pickles and brioche top bun.
